The crock is easier to fill and empty and
the sauerkraut gets better pressure using the plate as opposed to the bag of water in the glass jar method.
Alex — I always seem to have an issue with the very top of
the sauerkraut getting a bit «yucky» — it has not - so - good bacteria and I always scoop it out, but it grosses me out!

My first try at

get therapeutic amounts of probiotics, I ask my patients to eat plenty of fermented foods like kimchee and unpasteurized
sauerkraut, but also to take a quality probiotic supplement that contains billions (not millions) of colony - forming units (CFUs), which are used to measure a probiotic's potency.

get them in capsule form or eat more probiotic - rich foods like yogurt, kefir, kimchi,

For best results,

I can.t disagree with you until I know what you mean by fermented as it was I was not talking about fermented potatos, only leaving potatoes out to go sour is not fermented as they would be exposed to air, when you ferment
sauerkraut you do so with salt and exclude air right, so as to
get the lactic acid build up as your preservitive, which would make your ferment safe to eat.
