I decided to create this easy vegetarian
recipe for our little Lu who loves carrot but not zucchini so much It's perfect cut into wedges and makes a great healthy addition to
kids school or grownups work lunchboxes with a side of fresh fruit.
I keep seeing pumpkin spice
recipes and Halloween ads everywhere, and
kids are getting ready to go back to
school.
I'd love to see more
school friendly (nut free)
recipes, things that are quick and easy and work well in lunch and that
kids will actually eat.
I will also have to remember this
recipe next year on Dr. Seuss's birthday, March 2nd... my
kids cooked green eggs at
school by adding food coloring... this
recipe would be soooo much healthier!!
This
recipe uses just four essential ingredients, but it reminds me of the old
school tuna salad I used to eat as a
kid.
