We had a lovely, fairly light meal consisting of lots of seafood, such as crab cakes with muhammara (pomegranate sauce) accompanied by seafood Israeli couscous salad, then roasted Chilean
seabass with homemade preserved citrus hollandaise sauce.

The main kitchen includes dishes such as — suzuki no sashimi —
seabass sashimi
with yuzu, truffle and salmon roe; hourensou no goma ae — blanched baby spinach
with creamy sesame dressing; and the tsubu - miso hinadori no oven yaki — baby chicken oven roasted
with barley miso on cedar wood.
For the main course, I savored the Local
Seabass «Roots»
with parsnip puree, root vegetables, and pistachios ($ 32); Loin Filet
with lobster butter, mushrooms, and leeks in a demi - glace ($ 35); and the unequivocal star of the show — a moist and tender Ribeye «Tomahawk»
with cognac and horseradish ($ 75)
with plate presentation that commands attention.
Here is where anybody even remotely familiar
with the Raiders over the last, say, 10 or so years looks at the score, sees where the ball is at and yells out «
SEABASS!!!»
Needless to say,
with more than a minute left the Raiders probably only needed 5 more yards, if that, to be close enough to call
Seabass» attempt statistically probable.
We feasted on old style deviled eggs, tartare of oysters,
seabass, and salmon seasoned
with ginger and lemon, french onion soup, and blonde Aquitaine steak
with shallots and homemade mashed potatoes, served
with an amazing bottle of wine.
The fat content of the gilthead seabream had diminished after frying while that of the European
seabass remained similar or increased
with respect to the starting level.
We followed these haggis bon bons
with a
seabass fillet stuffed
with crab and prawn, served on smoked salmon mash
with asparagus & caper butter.
Great dishes on the menu here include the spicy steamed fillet
seabass flavoured
with lemongrass, fresh lime juice and crushed chilli, and the Phuket speciality yellow crab curry.
For our dinner we shared our giant portions of chilean
seabass, served
with a kimchee coconut broth, and the braised short ribs accented
with a tangy hoisin sauce.
Executive chef Richard Wilson's eclectic dishes run the gamut from Vietnamese - style banana leaf - steamed
seabass to Canadian scallops
with yellow lime — helping to make this one of the most exciting properties around.
Eat like an absolute king, we're talking vegetarian buffets of quinoa meatballs,
seabass sushi dipped in yakatori sauce, huevos rancheros, and avocados stuffed
with chicken and beet salad.
