You had me fooled — once I
saw the photos but before I
saw the title, I thought it
was pumpkin pie!
As you can
see with my previous cake ways (like this Spiced Apple
Pumpkin Snack Cake), I
'm a fan of simple, none frosted cakes.
I
was surprised to
see it listed as a spice in the
pumpkin pie that Dr. Greger would us as much as possible as I know the other spices
are very anti-oxidant rich.
I bought a nice fat
pumpkin and
was all set to make pie, but then I
saw this recipe for
pumpkin jam pop up on my feeds and couldn't resist.
As you can
see from the ingredient label, there
's protein in an enormous variety of plants, from hemp seeds and
pumpkin seeds to brown rice and lentils.
It
was summer when we
were there, so it definitely felt a little weird eating so much
pumpkin, but I loved it and couldn't resist ordering it pretty much whenever I
saw it on the menu.
I practically bowed to you last month when I
was in
pumpkin heaven / hell (could go either way depending on how you
see it)
I went to the store and
saw a bunch of cranberries and
pumpkins and I couldn't decide what to get — I have
been eating tons of
pumpkin so I guess it
was time to switch to cranberries.
Almost every
pumpkin cookie recipe I have
seen has
been «cake - like» — I love that yours isn't like that!
Pumpkin gnocchi have
been on my list for sooo long, and

seen too often — couldn't find in store this year then found my local garden center
was selling them as «decorative
pumpkins».

's definitely more of a bean soup than
pumpkin (can't really taste or
see the
pumpkin).
I love the color of

see me baking with it quite often:) THis

was tricky to get the ingredients here (black beans & sherry vinegar in particular, and also I don't know that I've ever
seen pumpkin puree in cans, but I made some with no problem).
I already
was working on a paleo
pumpkin bread, after
seeing your banana bread recipe, but my version needed some tweaking yet.
Perfect use for all those
pumpkins that the grocery stores have on the post-Halloween sale... I could
see myself varying this recipe in a million different ways - add some tamarind for tang, or sour cream if I
'm feeling «dairy»... mmmmm!
I used Rancho Gordo Black Beans, which probably have a ton more pigment than the usual, and my
pumpkin puree disappeared instantly, never to
be seen again.

Anyway, I didn't intent on breaking into it the very next day but when I
saw a display of
pumpkin at the supermarket, I wanted to try an idea I had
been toying around with for a while now - A simple cake bar, without needing any nut butter or sticky sweetener to bind together.
These delicious little treats
are made with a short list of ingredients: pie crust (store bought or homemade -
see TIPS below),
pumpkin puree, brown sugar and
pumpkin pie spice.
But if you ever really wanted to make something totally from scratch and you kept
seeing these
pumpkins at the farmer's market / grocery /
pumpkin patch and wondered how hard it would
be to do, let me put your mind at ease.
Quinoa (1 cup), rinsed and soaked for an hour Fresh parsley (1/2 bunch), chopped Fresh dill (1/2 bunch), chopped Fresh chives (1 bunch), finely chopped
