It made me giddy with excitement — I always like to
see gluten free baking experiments turn out well, and I've been having much
more consistent results ever since I started really thinking about the ratios and weights

more systematic fashion.
I understand where you are coming from, and I think
gluten free cookbooks can be marketed to different GF audiences — the
gluten free crowd is large enough that there is room for different types
of GF books, and so I
see a place for both books that do include naturally GF recipes (which I might call a GF lifestyle cookbook for an all around book with a variety
of types
of GF foods), and books whose purpose would be to focus on the
more technical recipes
of replacing
gluten.

seen in Italian cuisine.

gluten and complies with the EU Regulation (EU) 828/2014 for the labelling
of gluten - free foods.

Yesterday's Banana Bread versus Today's Tea Cake Style Bread: Today's version
of banana bread (at least the last 90 years
of it) is
more of a sweet tea cake than the banana bread
of yesteryear (which resembled yeast bread made with dried plaintain flour (though I
see banana flour back in the news as a
gluten - free flour
of the future).
I'm still not very impressed with the selection, given the number
of restaurants there are in this area, but it is getting better and I expect that we will
see more and
more restaurants start to have
gluten - free menus.

I haven't used much in the way
of corn meals or masa before but I
saw your recipe for pupusas and thought I'd get the instant Masa (love that it says
gluten free on the bag) The bag is big though and I need
more recipes besides corn tortillas and pupusas.
I want to reintroduce
more varieties
of whole grains into my diet, so please don't be alarmed if you
see a few recipes with ingredients that contain
gluten.

of other additives and sugar that defeat the purpose (we've
seen plenty
of gluten free products with this problem).
If your body is undergoing an autoimmune reaction to
gluten, one or
more of these blood tests most likely will come up positive, indicating the need for further testing to
see if you truly have celiac disease.
Once you
see the bigger picture
of health and learn how

I love that
more and
more low carbers are
seeing the benefit in cutting
gluten, soybean / corn oil and other low carb products out
of their diets.

Quinoa is a flowering herbaceous plant which isn't a grain and is
gluten free; the majority
of dogs whose owners believe they are allergic to grains are really not and the cause is due to another cause, dogs are
more like to have allergies to beef than grains according to some reputable studies (
see link below from Tufts University Veterinary School).
We're expecting to
see more things like connected blood pressure monitors, medical alert devices designed for seniors,
gluten sensors, fertility monitors, and sleep trackers — lots
of sleep trackers.
