Directions: Using a mortar and pestle, or a small grinder, mix garlic, ginger and half of the peanut
oil to form a thick paste / Add other spices, half of the water (1/2 C) to this mix, stir together and set aside / In a sauce pan, heat the other tablespoon of
oil to medium hot, add cumin and mustard
seeds and allow them to sizzle momentarily / Add spice paste, turn heat to medium low, and while stirring, allow to
cook for 1 to 2 minutes / Add cauliflower and potatoes, sweet or hot pepper if using / Stir together so that vegetables are coated with the spices / Add the other 1/2 C water, place a lid on, and simmer
for 10 — 15 minutes, until vegetables are tender / Remove lid and simmer
for another 5 minutes / If vegetables are done, remove them from the pan and continue to simmer the sauce until it reduces and thickens slightly — just a minute or two / Add roasted asparagus to the bowl / Spoon sauce over winter and spring veggies, sprinkle with chives.

I'm a coconut
oil fanatic
for all my
cooking and baking and using this healthy fat when roasting your pumpkin
seeds will only give you even more added health benefits.
For single specialized recipes (like Tiramisu and Super Greens), you'll need ingredients like rum, matcha powder, etc. -
For the protein bars toppings / frostings, you'll need Greek yogurt, Neufchâtel cream cheese, coconut
oil, various nuts and
seeds, caramel sauce (I used Date Lady ® Organic Caramel Sauce throughout the book because it's made from dates instead of sugar), 100 % fruit spread, ground flaxseed meal, shredded coconut, quick
cooking oats and quinoa flakes.
For the crackers: 1/4 cup chickpea flour 1/4 cup
cooked or sprouted lentils 1/4 cup sunflower
seeds 2T balsamic vinegar 1T coconut
oil 2 tsp curry powder 1 tsp cumin 1/2 tsp agave nectar Salt to taste
Cook the olive
oil, leek and fennel
seeds in a frying pan over medium heat
for 3 — 4 minutes until the leek begins to soften.
Toss in 1/2 cup raw sunflower
seeds and
cook until golden and crisp (save
oil for cheese).
Perhaps I should have
cooked them a little less, but it didn't matter / In a small, ovenproof pan, heat 1 t olive
oil, add 1/3 C pumpkin
seeds and a pinch of salt / Place in the 425 degree oven, along with the squash,
for just 6 or 7 minutes / Remove from the oven when they begin to pop and turn lightly golden / When cool, add most of the pumpkin
seeds to quinoa / Chop cilantro and parsley, add to bowl of quinoa.
