Day (yes, I did all the cooking) and
served it with some of my home preserved cherries with some homemade
ice cream.
So to finish off my 21
day challenge I thought i'd leave you all with this delicious soft
serve cherry
ice cream recipe.
My favorite summer dessert is a slice of fluffy lemon cake (preferably baked a couple of
days before... so that it becomes moistury, yet fluffy),
served with 2 - 3 scoops of home - made vanilla
ice -
cream and a summer fruit salad — nobody said that different amazing summer desserts are mutually exclusive, did they?!
We didn't even cover them up at night and I would still eat them, all dried out 3
days later, especially if the soft
served ice cream they also had was involved.
I even filled a few small freezer - safe mason jars with
ice cream so I'd have ready - to - go single
serve ice creams for the guests I was having over later that
day.

I haven't slept well for the last couple of nights, my little princess is fighting with flu and ear infection, the weather has gone all cold on us in Helsinki, the temperatures have dropped down 10 - 11 °C in less than 24 hours, I also had my last filling and tooth «cover» done yesterday, so once again I have looked like a tomato and felt crappy, etc... Not the best week and sometimes, no matter how positive you try to think and deal with everything, sometimes you just need this one
day to simply feel like * hit, cry it out if you have to and have a nice comfort in form of chocolate bar or an
ice cream sundae... That's what this
day will
serve me for and hopefully tomorrow will be much better.
