Stop when you can press the dough together into
a shaggy mass.
The dough will be a rough,
shaggy mass that will clean the sides of the bowl.
Pour in the lesser amount of hot water (plus the oil, if you're using it), and stir briskly with a fork or whisk to bring the dough together into
a shaggy mass.
Use a bench scraper to turn the dough over itself until it forms
a shaggy mass.
When the dough has formed
a shaggy mass, turn it out onto a lightly floured counter.
Mix until you reach
the shaggy mass stage.
With a wooden spoon or a pair of chopsticks, stir until mixture forms
a shaggy mass.
Add 3 cups of flour to the bowl and mix on low speed until the dough forms a wet and
shaggy mass.
It will be a large, sticky,
shaggy mass.
