Meal Plan - For us, one of the greatest gifts that we can both
share with others and receive, is food.
Today, I'm
sharing with you our new Cooking For One
Meal Plan — Week 1.
I said at the beginning of the week that I was going to be
sharing more
meals that were ready in under 15 minutes, but I wasn't
planning on having another one straight away.
I was actually going to hold off and
share these another week, but I
plan on recreating pretty much every
meal we've had thus far for the blog in subsequent weeks, so I thought you might get a little sick of repetitive Mexican recipes.
So I decided to
share some of my weekly
meal plans with you along with the grocery lists that go along with them for a bit of inspiration.
That's why I like to
plan ahead just a bit to have ingredients on hand to make a quick fix like the Asparagus Egg Scramble with Feta Cheese I'm
sharing today or to prep a make - ahead
meal such as my Barn Raiser Beef & Egg Casserole (freezable in individual portions).
This Mandarin Orange and Spinach Pasta Salad is on my weekly
meal plan this week and I never
shared it on Mother Thyme so I figured it's time to
share this delicious recipe with you.
I'll fill you in on the details later, I just wanted to pop in real quick to
share this week's
meal plan.
But, I am blessed to have parents now living nearby and three children of my own; that's why we try to get together as often as possible to
share meals — and happy news, hopeful
plans and lots of hugs.

meal plan, making a Humongous bowl of a stew such as this one and
sharing with them all.
Just dropping in to
share the kind of recipe you, too, might make if you found yourself on a Thursday with a reasonably well stocked pantry, a lot of kale (or other greens you picked up at the farmers» market back on Saturday), and two sweet Italian sausages that you bought from the very same farmers» market for way too many dollars and which are threatening to go bad if you don't find a way to integrate them into this week's
meal plan, a
meal plan that has already incorporated more meat than you really like to eat.
This year, we have a similar style
meal planned, and we'll be
sharing the different components each week, starting with this salad.
