Dice the chicken into small pieces and place in a bowl with 1/4 cup of olive oil and
shawarma spice.

It isn't cooked the way traditional
shawarma is, but it is still grilled, which gives it a nice flavor, and it is using a blend of
spices that will give you the taste that you're seeking out when you're in
shawarma mode.
Even though I think it's totally wrong to do so, I am calling this cauliflower
shawarma because the
spice blend used here is hard to describe any other way.
