Lay
another sheet of parchment over the dough ball.
Place a second
sheet of parchment over the mounds and flatten them slightly with another baking sheet or pie pan to make 2 - inch - thick rounds.

over a hot stove, my cheat method is to line a cookie
sheet with
parchment paper and place the salmon cakes on the
parchment.
