If you're searching for it elsewhere, look for
sherry vinegars made with Jerez (you can find this one and this one at many stores and on Amazon) or Pedro Ximenez (Jimenez) sherries.
A few grinds of fresh black pepper 1/4 teaspoon cayenne 1 tablespoon red wine vinegar 1/4 cup extra virgin olive oil (or just a few glugs) Juice of 1 lemon juice 3 cups tomato juice, low sodium (I generally add just enough to cover the tomatoes and veggies) A few sprigs of fresh thyme and some chopped parsley A splash of EVOO, sherry vinegar and freshly chopped herbs (I like to use fresh basil and chives) when serving... while this is optional, I think
the sherry vinegar makes this soup extra special!

In case your pantry is as poorly stocked as mine & you are wondering: I used just one can of beans (used slightly more pumpkin to
make up lost volume), rice wine
vinegar in place of
sherry vinegar, white wine in place of dry
sherry, no ham, no shallot (extra onion added), and tomato sauce instead of canned whole!

made it with red wine instead of
sherry, and no
vinegar or ham.
