If you want your finished date paste to include less water you can either blend the dates with the soaking liquid in a blender then
simmer in a saucepan until the paste has reduced.
For a topping, to avoid extra refined sugar, I took a pint of fresh blueberries and
simmered them in a saucepan until they gave up some liquid but still had recognizable berries (10 - 15 minutes).
