Although this is a layered cake that requires time, attention and ritual, I would say that technique-wise, this cake is on the simpler side when it comes to traditional layer cakes.

Simple, quick and healthy mid-week dessert: strawberry and cottage cheese cake made with coconut flour -LCB- gluten - free, refined sugar free, low carb -RCB- Last Tuesday evening we craved for dessert and since we are eating low carb on weekdays, I had to prepare something delicious and also healthy without any sugar or flour.

As well as scooping a big spoonful of compote on my morning hot cereal or bowl of Greek yogurt, I spoon it over frozen yogurt, on top of simple pound cakes, or enjoy it on its own.

So I like to keep either the cake or the frosting on the simple side, and really play up the other.

A simple glaze and Meyer lemon chips are icing on the cake.

I grew up having a simple cake and sauce for dessert on Sundays, this evening we'll be having squares of this with a caramel sauce made from honey and coconut milk.

Her description of the cake intrigued me, because while it started with a simple white butter cake, once the cake was baked you immediately spread a sweet almond mixture on top and then the cake was further baked until the almond topping turns wonderfully caramelized and crispy.

Also because it is a simple and warming, light fluffy cake which allows you to make extra golden milk if you wish and drink it on chilly mornings or sneezy evenings.
