Lentils are a go - to for me... I love
simple curried lentil soup (veg broth, diced onion, mushroom,
curry powder, cumin, garlic, and lentils + any add - ins you like... squash or
potatoes help add bulk to it, I like adding spinach or kale, tomatoes add a nice acidity...) or an even
simpler cold lentil salad made with red onion, diced tomatoes, lentils, chickpeas, and lemon juice / vinegar / EVOO.
Today I'm sharing this incredibly easy, super
simple beef and
potato curry.
The
simplest of Indian breads, chapatti is eaten at breakfast with
curried potatoes and at lunch or dinner with
curried meats and vegetable dishes.
This vegan Buddha bowl is built on a base of fragrant
curried rice and chickpeas and topped off with coconut - glazed sweet
potato, fresh juicy mango, creamy avocado and a
simple cilantro dressing.

simple and fast weeknight meals!
Sometimes I use this
simple recipe (but always with ghee butter... and fresh coriander before serving), sometimes I add carrots,
potatoes, lamb ribs, chicken,... There is nothing bland about this dish if you cook it right, and use a good
curry and stock.
Easy and decent as is, really good with a few
simple modifications: up the
curry powder, add jalapeno or other heat if you like it spicy, and instead of tomatoes I like cubed sweet
potato.
The cubed sweet
potatoes will be gently tossed with butter, brown sugar, and Madras
curry for a super
simple side dish.
