Since then, my bread baking skills have definitely improved, but I still lean toward
the simpler yeast bread recipes.

I did make the
bread, changing the
recipe slightly by making
simple sponge to get the
yeast going and adding a little dough enhancer so it was easier to stretch.
Even if you start with a good gluten free
bread recipe, a
simple substitution of baking powder for
yeast, does not work well.
I do use a sourdough starter as well as active dry
yeast in my
bread recipe, but I have also used a
simple biga or starter with good results and have included the
recipe for the biga below.
