To take the labor out of this meal, I
simply created a giant foil packet, lined it with some parchment paper, chopped everything into big chunks and
roasted it in the oven for about 20 minutes or
until everything became
tender and the sausage was cooked through.
Whole, peeled carrots are seasoned
simply with salt, pepper, and oregano, drizzled with a little garlic oil, and
roasted whole
until tender.
