potatoes in the microwave for about 8 minutes then
roast them in the oven.
Ok, so it's not really a recipe — I
simply roasted up a few sweet
potatoes on Food Prep Sunday.
So try this sheet pan chicken and
potatoes recipe this Sunday — it is
simply seasoned with spices, tomato and onion and
roasted in the oven for 90 minutes.
These were actual chunks of
potatoes, just
simply roasted.

I served these with
roasted brussels sprouts and cauliflower (
simply roast them in olive oil and sea salt on 375 for about 45 minutes, tossing them every 15 minutes until crispy and delicious), but I recommend serving them with some creamy mashed
potatoes or egg noodles as well (or even some crusty French bread) to mop up that delicious spicy - savory - chocolate - chile - wine sauce.

Roasted Sweet
Potato Soup is made
simply with sweet
potatoes (obviously), onion, garlic, a can of full fat coconut milk, vegetable or chicken broth, salt and pepper.
These
roasted potatoes are
simply amazing!
Roasted garlic, with its nutty smooth flavor and homey richness, is the perfect flavoring for
simply smashed
potatoes.
Sometimes he would beef them up with mushrooms,
roasted butternut squash, or
potato, but often they were
simply braised swiss chard with lots of chile flakes and a generous sprinkling of queso fresco on top to cool the heat.

These fries are so easy to make,
simply: cut
potatoes into wedges, drizzle with olive oil, sprinkle with sea salt and pepper and
roast in the oven.
This one was easy to adapt for kids as well, I
simply roasted a small tray of sweet
potatoes without the harissa as it is a bit spicy.
Simply roast a couple of golden kumara (aka orange sweet
potato) in the oven with olive oil, pure maple syrup, fresh ginger, a little cinnamon and pumpkin seeds.
