As for lopsidedness, I sometimes get that for the second batch
in dry weather because they
sat longer (so have a dryer skin) and the
oven can be a bit too
hot after the first batch is done.

I actually just heated up the
oven to the lowest possible temp, put the cheese
in there for 20 - 30 minutes, then turned it off and let it
sit for a half a day or so (it was a
hot day)!
Once the pork is done marinading, I bake it

sits on a rimmed baking sheet.
