I've made this banana bread twice now, once in a regular
size loaf pan and once in mini loaf pans.
If you're using a full
size loaf pan, start checking at about 60 minutes, but mine usually take more like 75 minutes.
I'm wondering what
size loaf pan you use.
I usually fluctuate between a big, what I call industrial
size loaf pan, and a «normal» size (of which I use two when making this recipe.
I'm not sure what
size loaf pan you're using, but you might want to consider one of these USA Pans loaf pans, since they're a bit more snug, which helps gluten - free breads rise nicely.
What
size loaf pan did you use?
Also, would doubling the recipe make it work for a regular
size loaf pan?

size loaf pan, and followed the recipe except that I used pecans instead of walnuts and added raisins (as mentioned in the notes).

size loaf pan — about 8 inches x 4 inches.
I used a 2 Quart Sauce Pan (I don't have the appropriate
size loaf pan), mixed ingredients in a Vitamix (so easy!)

I doubled the recipe, but used only 8 eggs instead of 10, put it an a standard
size loaf pan and it came out to the perfect size and is delicious!
Also, bread WILL rise in whatever
size loaf pan you use.
