If
the skin of your turkey starts to burn, tent a piece of aluminum foil over the part that is burning.
Rub the onion mixture underneath
the skin of the turkey.
Evenly distribute half of the herb - ghee mixture underneath
the skin of the turkey onto the breast meat.
Use half for the stuffing and smear the other half under
the skin of the turkey before roasting.
I like to make connections butter (butter mixed with herbs such as rosemary, thyme and sage), then rubbed on
the skin of the turkey.
Rub the remaining butter over
the skin of the turkey and season with a little more salt and pepper.
Carefully separate
the skin of your turkey from the flesh and work the fat mixture between the skin and flesh using your hands to massage the mixture as far up on the breast and thigh meat as you can without tearing the skin.
Season
the skin of the turkey on the top and bottom with 1 teaspoon salt and 1/2 teaspoon pepper.
Then pour hot water over
the skin of the turkey.
