When sweet
potatoes are ready, leave to cool for 10 minutes and then peel
off the
skin.
Once the
potatoes are softened, peel the
skin off (it should come
off easily) and mash the
potatoes in the pot.
Preheat the oven to 400º F and bake about 4 medium - sized sweet
potatoes (the orange ones) for an hour, until the
skins are practically falling
off.
Before boiling the
potatoes, cut
off any bruises and wash the
skin really good.
Once sweet
potatoes are cooked through, cut the
skin off the top of each then use a fork to break apart and mash the cooked flesh.

Begin by cutting a 1 pound pumpkin in half (I used a 2 pound pumpkin and used half of it for this recipe), then deseed it using a spoon, using a

off all the

I accidently made this with Japanese yams (they were piled up next to the Garnet sweet
potatoes and their red
skins threw me
off).
Finally, when
potato becomes soft, peel
off the
skin and mash until pureed.
Then peel the
skins off and put the skinless
potatoes through a ricer or mash with a fork.
Rinse in cold water and peel
off skins while
potatoes are still hot, but you are able to handle them.
I used Russet
potatoes and took the
skins off too.
Peel the
skin off the cooked sweet
potatoes.
Despite being cooked in the toaster, the sweet
potatoes maintain their soft and moist texture, and they can be toasted with their
skin on or
off depending upon your preference.
When the
potatoes have cooled, peel
off and discard the
skins.
Once the
potatoes have cooled, peel
off the top section of
skin (if you don't care to eat it), open up the flesh of the
potato a bit and heap on a couple spoonfuls of the pulled pork.
Ingredients 2
potatoes, washed, peeled and cubed 1/2 leek sliced into rings 1/2 onion diced 1 litre of chicken stock 2 chicken breast,
skin off, cooked whole 2 ripe tomatoes, chopped and deseeded 1 carrot cubed 1/4 celery sliced 1 small zucchini diced 2 tbsp of fresh chopped parsley Fresh ground black pepper Spray olive oil
Cut the
potatoes in half and either pinch
off the
skins or scoop the flesh out with a spoon.
With a whole host of good - for - you ingredients (fiber - packed sweet
potato;
skin - loving avocado; chelating cilantro), it's sure to kick
off a super-healthy day.
Dinner: family roast chicken: 60 - 100g of roasted starchy vegetables such as
potato, carrot, kumara, beetroot, onions, parsnip, or pumpkin, 1 - 2 cups of non-starchy vegetables such as steamed silverbeet, broccoli, zucchini, cauliflower with salt, olive or avocado oil or butter for fats, one chicken leg (100g meat),
skin on or
off.
Wash sweet
potato (I leave the
skin on mine for the discs, but you can take it
off if you prefer).
Once
potatoes have cooled, clean the
skins off.
When the sweet
potatoes are completely cooked, remove them from the oven (don't turn it
off though, you'll need to use it again later) and let them cool for a few minutes until you can safely handle them, then either peel them by pulling gently on the
skin or scoop the flesh out with a spoon.
Toss in whatever else you have (carrots, purple
potatoes, cauliflower, cabbage, peppers, green beans), sauté a little longer, then pour in a quart or two of chicken broth (preferably homemade) and fresh or frozen tomatoes (I prefer frozen whole tomatoes as the
skins peel right
off with a little rub under warm water) and maybe a jar of tomato paste to intensify tomato flavor.
Luckily,
potato skins can be peeled
off but there's no such luck with tomatoes.
Allow the sweet
potato to cool down and peel
off the
skin.
Peel
skin off sweet
potato and cut into large 1/2 -1 inch rounds.
Gather your leftovers and other ingredients, mash the roast
potatoes until there are no large lumps (there is no need to take
off the crispy
skin, it adds texture and is the tastiest bit of a roastie!).
