This looks amazing I subbed monterey jack cheese to top the chicken and I also used boneless
skinless chicken thighs which tenderized with a mallet.
Second, we used boneless
skinless chicken thighs which I believe is the answer to the age old question «how do I keep my chicken juicy on the grill?»

I used boneless,
skinless chicken thighs for the mock -
chicken (all of
which have gluten in them that I know of, so off limits for us...) and it worked out really well.
This recipe uses
skinless, boneless
chicken thighs,
which in themselves are delicious and remain moist and tender, when grilled in the oven.
I used large
chicken breast
which I cut in half, but boneless
skinless chicken thighs would also work well.
