When cucumbers were running rampant in the garden, my Mom just
sliced up cucumbers and put them in a bowl with vinegar for supper.

up in Holland some 20 years ago, and use it to
slice all sorts of things, it's great for mushrooms, carrots,
cucumbers, just about anything I want thinly
sliced.

Well, she loved
cucumbers (and still does), and when I was a kid we would often just
slice up a bowl of
cucumbers, add a little salt and eat them like potato chips.

up a few mason jars with water and
slices of
cucumber water.
Here's how: You'll need to clap three sprigs of mint between your hands,
slice up a quarter of a
cucumber and add to a jug of water, squeeze in the juice of a lime and leave to infuse overnight.
If plain H2O just doesnâ $ ™ t cut it, jazz
up flat water, club soda, or seltzer with a bit of mashed berries, and infusions of fresh mint, or basil and fresh grated ginger, or
sliced cucumber with lemon or lime.
If plain water sounds boring to you, spruce it
up with mint, lavender,
sliced cucumber, grapes, or berries.
Toss some
sliced cucumber on salad, dip some sticks in hummus for a snack, or try whipping
up refreshing
cucumber soup!
Make it tastier: If plain H2O is blah to you, spruce it
up by throwing in orange or
cucumber slices or fresh mint.
You can serve them on
sliced cucumbers with a little slivered carrot and cilantro garnish (as shown), or add diced shallots to spice them
up a little more.
When you bite into a juicy
slice of watermelon or refreshing
cucumber, each molecule of water is bound
up within the structure of that fruit or vegetable.
I eat 2 organic hard boiled eggs with some sea salt and some cut
up veggies (usually carrot sticks or
cucumber slices) before I hit a party.
