slices of baguette topped with the curry concoction for lunch) Oops, that's not dinner.
Mmmmmm... Garlic rubbed toasted
slices of baguette topped with a mix of slow roasted grape tomatos, sliced black olives, capers, fresh basil, and fresh mozzarella, all blended with a really good olive oil and some of the roasted garlic....
My favorite way to eat it that night was on a thin
slice of baguette topped with bruschetta.

slices of gruyere cheese and queso Manchego, divide the
slices of cheese on
top of the toasted breads, season with a little dried parsley and add the
slices of cheesy toast to the oven for about 8 minutes, until the cheese is melted and has a lightly browned crust on
top
Once they are set, you remove the skillet from the heat, sprinkle some chopped cilantro and grated Parmesan cheese over the
top, then serve it in shallow bowls with a few
slices of fresh avocado and thin
slices of crusty
baguette.
Tonight I made it using a 28 ounce can
of tomatoes and served it more as a soup without the
topping but with
baguette,
sliced horizontally, drizzled with olive oil,
topped with parmesan cheese and broiled.
Cut a
baguette into diagonal
slices that are about 1/2 inch thick, place the
slices of bread onto a baking tray lined with foil paper, drizzle a kiss
of extra virgin Spanish olive oil on
top of each piece and add the baking tray to the oven for about 5 minutes

of this vegan deviled ham spread over the
top.
Place crisped

of the bruschetta mixture.

top of the soup.

Butter the hot toast and make into croutons by cutting each
baguette slice into two or four small pieces, and toss on
top of any soup to make a spectacular addition to your soup serving.
