There are several ways to enjoy this curried
jackfruit salad: between 2
slices of whole wheat bread or topped onto one
slice of gluten - free bread; wrapped inside
of a tortilla or collard leaf; to top a salad with; or just on its own, as my sister Riva enjoys it best.
Pile this spicy
jackfruit filling into warmed pitas, and serve with soy yogurt, shredded lettuce,
sliced onions and tomatoes, and a dash
of hot sauce.
