Thinly
slice zucchini with a mandolin, spiralizer, peeler or knife lengthwise to about 1/8 inch thick slices, and then again into thin strips to create the zucchini «noodles».
In this recipe,
I slice zucchini with a spiralizer (even though you don't need one) to create pasta that is lighter, lower - carb and absolutely delicious underneath a simple leek tomato sauce.
Using a mandolin or even just
slicing the zucchini with a knife into very thin strips will also get the job done.
You can get away with thin
slicing the zucchini with a peeler or grating it.
