slightly chilled butter and that will give you more of the «dough» consistency that you are looking for.

It should only be
slightly softened, definitely not too soft, you can always
chill the dough in the fridge for 30 minutes if the
butter is too soft (see my recipe notes for more on this).

chilling the dough will be
slightly sticky, but not so much that you can not form balls (if you didn't let the
butter cool completely it will be too sticky).
