It doesn't affect the texture as much as it helps replicate the (
slightly eggy) taste.
I had to chuckle reading the comments about «egginess» — the only ingredients are eggs and cream cheese, of course they'll taste
slightly eggy!
The binder here is Follow Your Heart VeganEgg powder which I like for
its slightly eggy flavor and texture.

I had some with my egg for breakfast and it went really well as the bread has a
