In Eastern Maryland and Virginia its pulled pork mixed with a slightly tangy,
slightly sweet tomato based sauce, in Kansas its pulled pork drenched in a super sweet, dark colored molasses based sauce, in North Carolina its pulled pork in a shockingly sour vinegar based sauce, and in Alabama... well in Alabama they live under the delusion that the best BBQ in the world comes in the form of a flat, dry, piece of plain pork on a bun paired with a mystery sauce in a squeeze bottle... I kid you not, they really think its great.
Not exact matches
Some suggestions: instead of
tomatoes, try any juicy,
slightly sweet vegetable; add some kidney beans in there; replace the cucumbers with something equally crunchy, like fresh bell peppers; if you like the taste of raw onions, you can put some of those in; sub out the Feta for a goat cheese or perhaps Parmesan shavings; add roasted nuts or seeds; etc..
I wanted this particular meat sauce to have a
slightly different flavor profile than a typical meat ragu, so instead of using red wine and crushed
tomatoes, I went for a
sweet, but acidic balsamic vinegar and pungent wheat beer.
I chose
slightly different vegetables than the commun ceviche, like Cherry and Sun Gold
tomatoes, which balance the acidity of the traditional ceviche adding a
