But it's also a moment to remember that millions of children and adults still die needlessly annually from exposure to mosquitoes, fetid water or palls of indoor air pollution from
smoldering cooking fires; some governments and companies still trample human rights and pristine ecosystems to extract timber and minerals in remote places, and some among us plot atrocities or torture and subjugate those who are different or, too often, simply female.

Since the plank can catch
fire, or at least
smolders heavily during
cooking I don't recommend items that require long
cooking times (brisket, large roasts, etc.) since the food you're
cooking may well burn up along with the plank.
As for the temps, if your
fire is
smoldering it has a tendency to give a bitter taste to the meat but if you can keep a hot
fire while
cooking at a low temp it will not make a difference in the smokiness.
