Transfer steak to a chopping board and rest for 3 — 4 minutes while you toss in rocket, tomatoes, avocados, peppers, spring onions and

I made this salad because I had some
snow peas that I was trying to figure out how to use
in something other than a stir fry.

As for the
snow peas, if you like them raw, simply add them to the zucchini
in the bowl.
Also, since
snow peas were very expensive, I substituted baby spinach - no need for cooking, just put
in the bottom of the bowl and pour hot broth over.
I've added stir fried lotus root,
snow peas, shiitake mushrooms, red pepper, and fried tofu here, but feel free to mix
in whatever vegetables or protein you have
in the house!
This is especially nice when
snow peas come up
in the home garden; snap
peas can be substituted.

I like my
snow peas on the tender side, but if you prefer a crunchy
snow pea, wait until you add the cilantro to toss them
in.
Combine the cooked quinoa, asparagus,
snow peas, kohlrabi, and radishes
in a large bowl.
