The only thing is the coconut oil hardens them up,
so the coconut butter might not hold together as well.
I'm having fun looking through your recipes and I love coconut
so this coconut butter sounds delish but I'm curious... what all would you use it on / with?

The nuts and nut
butter give you such an amazing boost of plant - protein, while the dates give you lots of fibre, the
coconut oil is full of life - giving fats and the baobab doses you up on insane amounts of iron and vitamin C —
so you'll be buzzing after every bite!
So, in the end I used cow milk, organic quick oats, banana,
coconut butter and almond
butter.

I don't eat cashews
so always struggle w cashew cream alternative... would almond
butter work, or something else (not
coconut based tho!).
I couldn't find date syrup,
so I used
coconut syrup, which I bought for one of your other recipes and seeing as it only required a little almond
butter, I made my own.
Put the nut
butter and
coconut oil in the food processor and mix for 1 minute or
so.
There's also an amazing amount of plant protein in here too from the almonds, nut
butter and pecans
so each bite will energise you, leaving you feeling awesome instead of lethargic, while the dates dose you up on iron and fibre and the
coconut oil gives you anti-inflamatory goodness!
So I melted more
coconut oil, nut
butter and maple syrup to double that quantity and tried to add it but still it was very thick, stiff and lumpy.
It's such a good snack, I like spreading some
coconut oil or peanut
butter on the slices...
So yum!

coconut butter right around 4 pm + jam and a tortilla with mashed avocado and hot sauce an hour
so later to hold me over till dinner
