So while these are by no means diet food, they are
much lighter than most of the recipes for creamy delicious enchiladas I've come across, for example I cut 4 cups of
cheese and swapped full fat sour cream for fat free greek yogurt.
Also, it depends on the type of
cheese you use, like I used fresh ricotta
so it did not change the flavor
much, but if you use a
cheese which melts really well can take this omelette to another level, I swear!

It's
so much better than the cream
cheese version, and it just gets better from there.
Used for
so much more than dumplings, they can be stuffed with sweet and savoury fillings, topped like a pizza or layered with meat and
cheese to create these little lasagnas that also happen to be the easiest ones you'll ever make.
Although I've eaten far too
much cheese I feel great — tonight has been
so much fun!
