Through out my many stages of
sweet eating blueberry
muffins have remained a favourite, they're just
so succulent and moist with their big juicy berries,
sweet soft sponge and melt - in - your - mouth texture — and luckily these
muffins are no different!
I've made the
sweet potato brownie and blueberries
muffins and my daughters love them
so much.
I have made cookies with quinoa flour in the past, but found they didn't taste
sweet enough,
so when I use quinoa flour again I would pick a bread or
muffin recipe instead of something
sweet.
I've also been known to make extra
sweet potatoes just
so I can have leftovers to make these
muffins later.
There's
so much to love about these Paleo
sweet potato
muffins.
So by that reasoning, these
muffins are very high on my list of deliciousness... they are perfect for breakfast, lunch or snack, since they're not too
sweet for a meal, but not too healthy for a snack.

SO delicious... a nice combo of
sweet and savory goodness that can just be popped right into your mouth.

The corn bread is replaced with a coconut flour blend,
so they still have that slightly
sweet corn bread texture and taste but with only about 4 net carbs per

muffins, blueberry cobbler, and fudgy chocolate bundt cake with coffee glaze.
They do have a tang to them and you will taste the rhubarb in this recipe, that's why it's rhubarb
muffins,
so while the
muffin as a whole is
sweet it does have that rhubarb acid coming through.
Calamansi flavored
muffins with crumb topping and citrusy,
sweet glaze — soft, moist and
so delicious!
These are definitely a low - sugar, low carb recipe
so they won't taste the same as traditional
muffins which are much, much
sweeter.
Place about 2 tbsp crumb toppig on top of each
muffin - you'll have some topping leftover,
so feel free to add more or save it as a deliciously
sweet topping for oats, nice cream, etc..
:) The beetroots do not taste
so rest assured these

Haha, I was expecting savoury
muffins,
so sweet ones were a bit of a surprise.
I knew Juli's coconut flour
muffin model would work,
so I just went for it, replacing all the
sweet stuff with savory stuff.
Rather than use these carrots in a savory meal, I was in the mood for something
sweet so these beauties made their way into a batch of

sweet (with only two tablespoons of maple syrup),
