Coconut was generally a very exotic flavor to us back then, since the Soviet flavor lexicon most definitely did not involve anything coconuty (another fun fact about growing up in the Soviet Union: I tasted my first banana when I was 16 years old because they were
so difficult to

so glad I didn't throw out
coconut milk (which I bought in hopes to switch from regular kind but hated it) and was able to use it for this.
All three layers work
so well together as you've
got the crunch from the nutty base, the creaminess from the

Hi Ruth, if it has too much fruit in it for you, you could try reducing it a bit as for the
coconut flour I don't see why you couldn't use it but I haven't tried it
so I am not sure of the result you would
get.
So, if you have a
coconut milk that is higher in fat content and therefore more solid, you may need to add slightly more to
get the hummus to the texture you need.
I cooked it for 30 minutes and would recommend leaving out the
coconut milk and the mushrooms after pressure cooking
so they don't
get too mushy and the
coconut milk will curd.
So, taking a bit of a break from pumpkin spice and everything nice, (at least for today), we're making a delicious Pomegranate

so I've been loikong for a starter recipe using almond flour, this one turned out pretty well, despite a lot of substitutions I used half chickpea flour, I added cocoa instead of chocolate chips, subbed earth balance for the fat and sweetened with a little
coconut sugar and stevia.
Energy balls don't need to be oily, they don't need added fats that are stripped of all of the things that make sunflowers and
coconut so good for you, which is what you
get when you consume oil.
