As the difference is mostly that
fresh dates are softer, I've found that
soaking the equivalent number of dried
dates in hot water makes them a good substitute for
fresh dates in baking.
I used
fresh pulp from this morning's almond milk,
soaked the
dates as someone suggested, added a little almond flavoring, baked correct amount of time and while they have good flavor and are moist, they are hard to swallow.

dates would be if they were really very dried out and not
fresh at all.
