I used fresh pulp from this morning's almond milk,
soaked the dates as someone suggested, added a little almond flavoring, baked correct amount of time and while they have good flavor and are moist, they are hard to swallow.

dates but you may have to
soak them first to soften them
as they need to be really soft and moist for this recipe!
I did this recipe yesterday after all Fortunately i did
soak the
dates and even added a little bit more of them
as they were really small.
As regular
dates are slightly harder I would recommend
soaking them for a little while before using them.
I've found if I
soak regular
dates in some warm water for an hour or so they plump up nicely and are * almost *
as good a sub for medjool
dates!
You will get very sweet syrupy water and you can also blend the
dates after 24h have passed (or earlier is in hurry) so you will have a thicker syrup
as well (I normally do this to use all the
dates I
soaked in water).
We don't tend to
soak dates before blending because we find medjool
dates are gooey enough
as they are.
If you're using normal
dates, try
soaking them in warm water first to help soften them

As the difference is mostly that fresh

you CAN totally
soak the
dates, but make sure to measure and use the same water for
soaking as you are for blending.
the
dates can
soak just 10 - 15 minutes prior to adding them into the blender / food processor and they will mostly turn out the same way
as soaking them for longer.
In the winter months, dried fruit such
as figs, prunes or
dates also work well,
as soaking the dried fruit in the cream and milk softens it while cooking.
Soak dated, I use warm / hot water, once they are soft remove pits, run them through a food processor adding a little water

Chana, if you were going to do a large tart I would suggest buying soft
dates that don't need
soaking to blend versus using very dry firm ones that require
soaking as the crust will be much softer and trickier to serve if the
dates need
soaking.
