"Soba" is a Japanese word that refers to a type of noodle made from buckwheat flour.

from Annie Eats but just used the vegetables I had and substituted black rice noodles for
soba noodles!
Buckwheat is not only very healthy but also really versatile — it can be eaten savoury or sweet, warm or cold — or in the form
of soba noodles of course!
However, for this recipe post, I
used Soba buckwheat noodles (as you may see in the pictures).
You can keep it simple if you like, but in this version I
add soba noodles and tofu, and a few garnishes.

love soba in many ways, but I haven't made it for ages.
