soda bread which is a real treat, thanks Laura for introducing me to The River Cottage Baby and Toddler Cookbook.
This week I put in a request for my son's Irish
soda bread which is somewhat fool proof.
Not exact matches
It tastes a bit like Irish
soda bread,
which is not my favorite.
Irish
soda bread had this amazing taste and seemed appropriate served any
which way.
We both cried over the same things initially, the family chocolate «Crazy Cake» recipe, another family cake called «Poor Mans Cake»
which is served at every family get together, girl scout cookies,
soda bread and scones, and warm no - knead
bread right from the oven.
This Strawberry
Bread is a «quick»
bread which means it is leavened by baking powder and baking
soda.
Dry ingredients in one bowl: whole wheat white flour (I didn't have whole wheat white
BREAD flour but I was just hoping that's what the recipe really implied), rolled oats, organic cane sugar (
which I shockingly have in abundance), brown sugar, baking powder, baking
soda, salt, and cinnamon.
The baking powder made it a cornbread consistency
which I liked as well as the more
bread like one with the baking
soda.
when I make my usual
soda bread (using Nick Malgieri's recipe), I usually add 1/4 cup or so of steel - cut oats,
which gives a nice texture.
Admittedly this is not a purist's
soda bread,
which would probably be either plain or studded with a sweet mix - in like raisins.
Americans like to add all sorts of things like fruit to
soda bread,
which is pretty far from the original plain - Jane, but totally awesome, Irish
soda bread.
Soda Bread, leavened with bicarbonate of
soda rather than yeast,
which makes it perfect for me as I am supposed to be avoiding yeast, it's not easy as I love
breads of every kind!
Which means I spent this weekend recipe testing to create the perfect gluten - free, vegan Irish
soda bread!
It falls into the category of
soda breads,
which is a lower maintenance breed of
bread that rises with the help of baking
soda instead of yeast.

I have not tried this particular
soda bread recipe, but I have just tried one from River Cottage website
which I made with just 500g of white
bread flour, 2 tsp of bicarbonate of
soda, 1 teaspoon of fine sea salt, and 400 ml of soured milk by adding 2 1/2 tbs of pure lemon juice to 400 mil of milk, whisking in and standing for 20 min.
Bicarbonate of
soda, or baking
soda, is an alkali
which is used to raise
soda breads and full - flavoured cakes such as gingerbread, fruit cake, chocolate cake and carrot cake.
I discovered this just because I was lazy — I left those out and realized it didn't make the
bread any less fluffy than with it (then later I tried it with non dairy milk — can't remember exactly
which type — and they were pretty flat without the baking
soda / powder).
Sodas,
which have high amounts of sugar, white
bread, too much dairy, drugs, alcohol and fast food.
To lighten the dough as much as possible, raising agents
which fizz with tiny bubbles on contact with water (like baking powder, bicarbonate of
soda and cream of tartar) are often included in gluten - free
bread recipes to lighten the dough as much as possible.
I have done much reading and from it all; it seems the healthiest way is to get rid of the white flour
bread, white flour pasta, sugar,
soda, potato chips, white rice, sugary juice; and consume lots of leafy greens, sweet potatoes, pistachios, creamy unsweetened peanut butter, whole grains, whole fruit, unsweetened coconut milk (
which is so GOOD!)
Use your drug - of - choice (candy, chocolate, starchy foods like
bread or pasta, cookies, ice - cream, coffee,
sodas or wine / beer etc) and the chart below to help you determine what brain chemistry imbalance may be affecting you and
which amino acid you may benefit from.
The most common culprit is a diet high in sweets,
soda, and starches (
breads, pasta, rice, corn, potatoes, etc.) This diet consistently raises blood sugar levels,
which in turn requires the body to secrete high levels of insulin to lower blood sugar.
A low carb diet is low in carbohydrates,
which are typically found in pasta,
bread, sweets and
soda.
That begins with baking at home,
which the network and many members promote and teach, and if baking at home means beginning with brown
bread leavened with
bread soda, well and good.
Eating foods that are higher in glycemic index (GI),
which include simple carbs: potatoes, white
breads, sweetened + processed cereal,
sodas and other drinks sweetened with high fructose corn syrup, corn products, white rice, and sweetened «junk foods» of all kinds — break down rapidly, causing a rush of glucose into the blood stream.
I never put too much thought into how my diet might be affecting my skin as I usually avoid eating fast food,
soda and sweet things, but I never considered that my intake of simple carbs like
bread, rice and pasta (
which I love to eat a lot of) might be causing problems.
It provides a lighter consistency than a standard whole - wheat flour,
which may make it a nice alternative for sweeter
bread recipes such as Irish
soda bread.
I've had some readers try to bake with expired baking powder and baking
soda,
which caused the
bread not to rise properly.
