I used my KitchenAid mixer to easily form
soft peaks out of my egg whites before gently folding in the coconut sugar, vanilla, grapefruit juice, pinch of salt, shredded coconut, and grapefruit zest.

out the eggs and whisk 1/3 cup aquafaba (chickpea water) into
soft peaks that you stir into the mixed batter together with the walnuts.
Whipped Cream: In same bowl still, but rinsed
out if you'd like, beat the heavy cream and pwdered sugar until
soft peaks form.

The only thing I did differently from the recipe was to use an entire jar of peanut butter, because the amount called for would have left a little (and also so I wouldn't have to wash peanut butter
