I adapted to
make it a main dish meal (healthier) in my blog because it was so tasty that I couldn't keep my hands off it!
Serving Suggestions: Serve as a side salad, or top with a few slices of chicken or steak and make
it a main dish.
The only adjustment I made was using chipotle chili powder versus plain chili powder and adding chicken to make
it a main dish!
This dish also only takes about 15 - 20 minutes to make so it's an easy side dish or toss in a few more of your favorite veggies and make
it a main dish.
Here's my adaptation of these — perfect to complement nearly any main dish — or — add a protein on top to make
it the main dish itself!
I made it gluten - free and eliminated the chicken, but if you eat chicken, you can add a barbecued chicken on top and make
it a main dish.
