I realize that this is anecdotal, but I was able to ride my own cholesterol numbers down from 203 to 166 by means of dietary intervention on my journey from omnivore to
vegan; which was originally unintended, yet logical destination; by first eliminating beef, pork and lamb; then to
chicken skin removal, eliminating
chicken altogether, fish off the menu until the only animal products left in my diet were a hard boiled egg, sliced, or 4 oz of poached shrimp, and
sometimes both.
