I did nt have oat flour so I used
sorgum flour instead and worked really well.
Being from the south, I always have
sorgum in the pantry.
I made this gluten free
with sorgum, brown rice flour and tapioca.
Tapioca flour, flaxseed, potato flour, brown rice flour, super fine brown rice flour, and
sweet sorgum flour.
I even have
sorgum molasses in my pantry (along with the other ingredients).
I also add a cup of a gf sourdough starter that I nurture with brown rice flour and
sorgum flour.
For the flour I would probably do a mixture of teff,
sorgum, millet, & buckwheat.
Brown Rice Flour: Brown rice flour is a great flour to mix in with other flours like teff, buckwheat or
sorgum (see white rice flour below — different qualities than B.R.F.).
