species of amaranth contain edible seeds, most contain leaves that can be safely consumed.

some species of amaranth leaves, particularly purple amaranth, are high in oxalates the same as spinach.
Well, actually Phenylalanine has been detected in certain
species of Amaranth, so really it just lacks Tryptophan.
