These Chocolate Pecan

At Tandem Bakery in Portland, Maine, pastry genius Briana Holt bakes shortbread
cookies with dark rye
flour, frangipane tarts with nutty, tangy buckwheat
flour, and even gives that most classic summer dessert — the fruit crisp — a twist by incorporating
spelt and quinoa
flours with oats into the crumble topping.
I decided to give it a try and excitedly but nervously made a batch of
cookies with 1/2 rice
flour and 1/2
spelt flour.
Spelt flour makes excellent pasta,
cookies and other baked goods.
Just made the
cookies using unsalted butter, 3/4 cup of whole
spelt flour (because I had only 3/4 cup of oats), and brown sugar (because I didn't have coconut sugar).
I've posted pics of some of the things I've tried out of it so far — the whole wheat chocolate chip

The
spelt -
flour pancakes have a crunchy
cookie crumb core and are layered in between coatings of thick raspberry - dark chocolate ganache making every single bite a delight!Crown the top with an extra serving of fresh raspberries an a light dusting of sugar.
You should have the perfect
cookie dough texture but if too dry add a little splash of almond milk, if wet add a little extra
spelt flour.
I'm following a gluten free diet, what is a good alterntive
flour to use in these
cookies as
Spelt is not gluten free?
You can use
spelt flour to make any baked goods you would make with any other
flour including cakes,
cookies, muffins, flatbreads, biscuits, waffles, donuts and brownies.
I tried your choco chip
cookies with
spelt flour too, and I had the same reaction... But the
cookies were very yummy As for the tortillas, the first 2 came out a bit hard, but that's my fault because I had them too long in the pan.
Maybe I will use
spelt or rye
flour and let you know how it goes (still have left - over rye from making the Swedish rye
cookies!).
I make very similar
cookies but without the
spelt flour.
This recipe uses
spelt flour, which is a bit sweeter than wheat and makes a soft and tender
cookie.
I have never baked with
spelt flour before but may have to start after seeing how good these
cookies look!
Note: Unbleached all - purpose
flour or
spelt flour produces a more classic
cookie taste and texture, but you can use whole - wheat pastry
flour and still get a delicious
cookie.

Made using a wholesome and nutty wholegrain
spelt flour, sweetened only with dates and bananas, vegan (and great if you've decided to take part in Veganuary) and very quick and easy to make, these cakes, muffins, loaf,
cookies and puddings are delicious and nourishing treats; less heavy than all those pies and puddings around at Christmas, but certainly just as tasty, fulfilling any cravings if you're trying to slightly curb your cake - enthusiasm a little after the festive - excess!
Cookies: 1 1/4 cup whole
spelt or whole wheat

Still, if you're curious, my favorite mix is about half and half bread and cake
flour by weight (200 grams each), or, in the case of the craggy
cookies pictured above, a mix of bread
flour, cake
flour, and a whole grain
flour like white whole wheat, sprouted wheat, rye,
spelt, etc..

The
cookies can be made gluten free by replacing the
spelt flour with a gluten free
flour blend (I recommend 1/2 cup all purpose + 1/2 cup buckwheat), but make sure you add 1/4 teaspoon of xanthan gum.
Added
spelt flour and in the end the
cookies did turn out great.
Spelt flour bakes into a slightly darker
cookie (photo), whole wheat pastry
flour is slightly blonder - more traditional in appearance in the end.
