Where pico de gallo and salsa verde are staples not to forget, try including other toppings such as quick
pickled onions and red chilies (don't forget
spicy fruit salsas such as mango or pineapple) and definitely this fabulous red
cabbage radish slaw with cumin lime vinaigrette!
The tanginess of
pickled cabbage cuts and compliments the rich,
spicy pork flavors to a tee.
I went with over-the-top delicious Korean BBQ Bibimbap Veggie Burgers piled high with amazing toppings such as:
spicy pickled cucumbers, sweet potato and carrot shoestring fries, red
cabbage, and a fried egg.
Kimchi, a
spicy, garlicky Korean
pickle often made with
cabbage, is especially delicious on the side and is loaded with beneficial bacteria known as probiotics.
I chose a variety of dishes / stews: misir (red lentils and
spicy berbere), kik (curry split peas), yatakilt (curry potatoes, carrots, and
cabbage), gomen (kale, collards, and garlic),
spicy sweet potato (sweet potato and berbere), and kale salad (with
pickled onion, curry chickpeas, and dates).
Spread some of the bean mixture on top (this is an open - faced sandwich, remember), then the squash and shallots,
cabbage, slices of avocado,
pickled peppers (I used only a couple because I am still learning to embrace really
spicy food), and finally some cilantro.
What I get: Greens and grains bowl with half super greens and lentils OR greens bowl with a mix of baby spinach and super greens / / dips: eggplant and red pepper dip, harissa and red pepper hummus / / protein: a mix of grilled chicken and falafel toppings:
