This salad came about because I go so tired of watching Manservant open a can of
beans and pour them
over spinach and top them with a fried egg.
Spoon
over spinach along with the drained potatoes and
beans.
Also I just mixed some
spinach right into my
beans and served it
over rice and / or sweet potato chips.

Spread chicken,
bean and
spinach mixture
over one half of the tortilla.
Serve
over beetroot,
bean sprouts, pumpkin, spiralized Zucchini (courgette) and peas in a homemade basil dressing, red kidney
beans with tomato and onion, yellow capsicums (bell peppers) avocado with poppy seeds, then topped with a dollop of (dairy - free) cream fraiche, all on a bed of
spinach!
Give the dressing another good whisk then pour
over the
spinach and
beans and toss really well.
I mixed most of the toppings (carrots, onion, red pepper, corn) right into the quinoa and
bean mixture and served it
over a bed of
spinach.

spinach leaves Salt and pepper to taste 4 - 6 cups of water, depending on how thick you want the soup, if using dry
beans you will need more water as dry
beans will absorb the liquid
I went vegan a little
over a year ago and I've been packing in the
beans, lentils, whole grains, and greens, especially
spinach (and especially into smoothies with strawberries, got ta get that vitamin C to help absorb the iron) and yet I was still relatively low on iron when I went to get my blood checked (within the «normal» range, but definitely on the lower end).
By the time we got home, everyone was starving, so I had to rush through this recipe for garlicy
beans and
spinach over polenta.
Dr. Bouzari and colleagues at the University of California, Davis, compared the vitamin content in eight different fresh and frozen fruits and vegetables — corn, carrots, broccoli,
spinach, peas, green
beans, strawberries and blueberries — and found no consistent differences
over all between fresh and frozen.
I'm talking about a half cup of black
beans and a third cup of pecans or walnuts with my huge
spinach / kale salad every day, with a quarter cup of quinoa sprinkled
over it, and that's it.

If possible, take advantage of salads bars or make your own at home so you have control
over what goes into it — try starting with dark leafy greens like
spinach and loading up on fiber - filled
beans, and colorful veggies like red peppers, corn, and snap peas.
Over the years, I've grown lettuce,
spinach, peas, cauliflower, broccoli, squash, pumpkins, rhubarb, tomatoes, asparagus,
beans, potatoes, sweet potatoes, and about as many herbs.
