Beat in 3 medium eggs (sadly duck eggs are no longer in season), alternating each one with
a spoonful of the flour mixture.

I forgot to buy the brown
flour so replaced it with lacuma powder and added an extra
spoonful of maple syrup as the
mixture didn't taste that sweet.
If the
mixture starts to split you can add a
spoonful of flour to bring it back together.
I used my standard latke recipe to start, but found it benefitted from an extra egg and a
spoonful of extra
flour to make the
mixture more batter - y for the waffle maker.
Add a couple
of spoonfuls of flour to the cake
mixture stirring in gently, followed by a couple
of spoonfuls of cocoa
mixture.
Mix on speed 1 for 3 - 5 minutes until the
mixture comes together as a ball, adding a
spoonful of water at a time if needed or extra

floured fingers press into all the corners.
If you grind the nuts in a food processor, use the pulse button and add a
spoonful of the plain
flour from the cake
mixture, to stop them getting too oily.
