Their behavior has not changed much, but they now have light - blue or green - spotted white caps (these cap colors are reversed in remakes), though in the NES version, a pure white 1 - Up Mushroom can be found in World 6 - 3.

Targeting those vulnerable, breakable bits of your foes is made easier by the introduction of damage numbers, which change color depending on whether you're striking a weak spot, and generally give you a much better indication of how effective your attacks are than in any previous iteration.

Perhaps the coolest ability is that you can change your color with the Playstation's shape buttons (the blue X turns you blue, red circle turns you red etc) this leads to some fun puzzles as you will have to change color multiple times in one room to avoid being spotted.

Check once a month for spots that are new or asymmetrical or that change in size, color, or thickness.
